Friday is pizza day, am I right or am I right?
After being in quarantine for…how long is it now? Three years? Anyway, we are getting really good at making our own dough since our local grocery stores have consistently been out of dough. They’ve been out of flour and yeast, too, for that matter, but we’ve been lucky.

1 ⅓ cups warm water
1 package (2 ¼ teaspoons) yeast
3 ½ cups flour
2 tablespoons olive oil
1 tablespoon salt
Combine warm water with yeast. Let stand until yeast is dissolved, about 5 minutes.
Add flour, olive oil, and salt. Mix by hand or on low speed for about one minute.
Knead the dough by hand, or with dough hook, on low to medium speed for about 10 minutes or until the dough is smooth and elastic.
Transfer to a bowl, lightly coated with olive oil, turn dough to coat with oil. Cover with a cloth or plastic wrap and let rise for 1 to 1 ½ hours.
Punch the dough and divide in half, cover loosely, and let rise another 10 to 15 minutes. Your dough is now ready to be rolled out, topped as you please, and baked!
